  • 2 tablespoons fresh lemon juice
  • Zest of 1 lemon
  • 1/2 cup Greek yogurt (optional, for creaminess)

Instructions

  1. Combine the chia seeds, almond milk, maple syrup, lemon juice, and lemon zest in a mixing bowl.
  2. Stir well to ensure the chia seeds are evenly distributed throughout the mixture.
  3. Allow the mixture to sit for about 10-15 minutes, stirring occasionally, until it begins to thicken.
  4. If using Greek yogurt for added creaminess, blend it into the chia mixture now.
  5. Transfer the pudding to individual serving cups or a large container.
  6. Cover and refrigerate for at least 2 hours, preferably overnight.
  7. Before serving, give it a gentle stir and top with your favorite fruits, nuts, or granola.
