  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups heavy cream
  • 1 pound potato gnocchi
  • 2 cups spinach (optional)
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Parmesan cheese for serving

Instructions

  1. Heat a large pot over medium heat. Add the sausage and cook, breaking it into bite-sized pieces until browned, about 6โ€“8 minutes. Drain excess fat if necessary.
  2. Add the diced onion to the pot and sautรฉ until translucent, about 3โ€“4 minutes. Stir in the garlic and cook for 30โ€“60 seconds until fragrant.
  3. Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the pot.
  4. Stir in the heavy cream and Italian seasoning. Lower the heat to maintain a gentle simmer.
  5. Add the potato gnocchi and cook according to package instructions until they float to the top, about 2โ€“4 minutes.
  6. If using spinach, add it now and simmer for 2โ€“3 minutes until wilted.
  7. Taste and season with salt and pepper if needed. Ladle into bowls, topping each with grated Parmesan.

Notes

For lighter soup, use half-and-half or whole milk plus a tablespoon of cornstarch to thicken. Swap sausage for turkey or plant-based options for alternatives.
