A delightful and nutritious breakfast dish that combines the warmth of baked oats with the cozy flavors of pumpkin and spices.

  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon baking powder
  • ยผ teaspoon fine salt
  • 1 cup pumpkin puree
  • 1 cup milk of choice
  • 2 large eggs
  • โ…“ cup pure maple syrup or honey
  • ยผ cup unsalted butter or coconut oil, melted
  • 2 teaspoons pure vanilla extract
  • ยฝ cup chopped pecans, toasted

Instructions

  1. Preheat your oven to 375โ„‰ and grease a 9ร—9-inch baking dish.
  2. In a large bowl, combine the oats, pumpkin pie spice, baking powder, and fine salt.
  3. In a separate bowl, mix together the pumpkin puree, milk, eggs, maple syrup, melted butter, and vanilla until well blended.
  4. Pour the wet mixture into the dry ingredients and stir until just combined.
  5. Transfer the batter into your prepared baking dish, and optionally sprinkle additional toasted pecans on top.
  6. Bake for 30-34 minutes, or until the center is set and a toothpick inserted comes out clean.
  7. Let it cool for 5 minutes before cutting into squares.
  8. Serve warm with a dollop of yogurt or whipped topping, a drizzle of maple syrup, and a sprinkle of pumpkin pie spice.

Notes

To keep leftovers fresh, allow it to cool completely before storing in an airtight container for up to five days or freeze for up to three months.
