  • 1/4 cup soy sauce
  • 1 tablespoon honey
  • 1 tablespoon garlic, minced
  • 1 tablespoon ginger, minced
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • Cooked white rice
  • Mixed vegetables (e.g., bell peppers, broccoli, carrots)

Instructions

  1. In a medium bowl, whisk together peanut butter, soy sauce, honey, garlic, ginger, lime juice, salt, and pepper to create the sauce.
  2. Heat a tablespoon of oil in a skillet over medium heat. Add the chicken pieces and cook, stirring occasionally, until browned and cooked through, about 6โ€“8 minutes.
  3. Reduce heat to low and pour the peanut butter sauce over the chicken. Stir until the chicken is well coated and the sauce is warmed through, about 1โ€“2 minutes.
  4. Serve the chicken over cooked white rice with a side of mixed vegetables.

Notes

For a spicy kick, add chili garlic sauce to the sauce. Store leftovers in an airtight container for up to 3โ€“4 days.
