A delightful dish that combines the nostalgic flavors of childhood with wholesome oatmeal, perfect for breakfast or dessert.

  • 1 large spotty banana (mashed)
  • ยฝ cup creamy all-natural peanut butter
  • 3 tbsp real maple syrup (or honey)
  • 1 ยพ cups of unsweetened almond milk or oat milk
  • 1 large egg (or 1 tbsp ground flaxseed with 3 tbsp of warm water for vegan option)
  • 2 tsp vanilla extract
  • 2 cups old-fashioned rolled oats
  • 1 tsp ground cinnamon
  • 1 tsp baking powder
  • ยฝ tsp salt

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC). Lightly grease a 9-inch square dish.
  2. In a large bowl, mash the banana. Add peanut butter, maple syrup, almond milk, egg (or flaxseed mixture), and vanilla extract. Whisk everything together until smooth.
  3. Stir in the rolled oats, cinnamon, baking powder, and salt. If the mixture appears too thick, thin it out with a bit more milk.
  4. Pour the mixture into the greased dish and spread it evenly.
  5. Bake for 35 to 45 minutes, or until the top is golden brown and the center is set.
  6. Allow it to cool for 5 minutes before serving. For an extra treat, drizzle some peanut butter on top and garnish with banana slices.

Notes

Leftovers can be stored in the refrigerator for up to a week. Reheat as needed. Consider adding nuts or chocolate chips for texture.
