Fluffy, bite-sized pancake poppers baked to perfection, perfect for snacks or breakfast.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 tablespoon sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup milk + 1 tablespoon vinegar (or buttermilk)
  • 2 tablespoons oil
  • 1 egg

Instructions

  1. Preheat your oven to 375ยฐF (190ยฐC). Grease your mini muffin tins with cooking spray.
  2. In a small bowl, combine the milk and vinegar. Let it sit for 5 minutes until it curdles, then stir in the oil and egg.
  3. In a separate large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  4. Pour the wet mixture into the dry ingredients, using a gentle hand to stir until just combined. Be careful not to overmix!
  5. Fill each mini muffin cup about one tablespoon full with the batter.
  6. Bake for approximately 8 minutes, or until the poppers are golden and puffy.
  7. Carefully remove them from the tins and let cool for a few minutes before serving. Enjoy warm!

Notes

Pancake poppers can be stored in an airtight container in the refrigerator for up to 3 days. They can also be frozen for up to a month.
