A delicious and easy-to-prepare dish, perfect for both weeknight dinners and family gatherings with savory spices and a hint of lemon.

  • 4 boneless, skinless chicken breasts, 6โ€“8 oz each
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • ยฝ teaspoon salt
  • ยผ teaspoon black pepper
  • ยผ cup olive oil (for marinade)
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • ยผ teaspoon black pepper
  • Lemon slices (for garnish)
  • Fresh chopped parsley (for garnish)

Instructions

  1. Preheat your oven to 400ยฐF. Line a baking sheet with parchment paper or lightly grease a baking dish.
  2. Pat the chicken breasts dry with paper towels. Place them between two sheets of plastic wrap and gently pound them to an even thickness of about ยพ inch.
  3. Mix together 2 tablespoons of olive oil, garlic powder, onion powder, paprika, oregano, salt, and black pepper in a small bowl.
  4. Rub the seasoning mixture evenly over both sides of each chicken breast.
  5. Marinate the chicken in the optional marinade for 30 minutes to 2 hours in the refrigerator.
  6. Arrange the seasoned chicken breasts on the prepared baking sheet.
  7. Bake for 18โ€“22 minutes, or until an instant-read thermometer registers 165ยฐF.
  8. Remove from the oven and let it rest for 5 minutes before slicing.
  9. Garnish with lemon slices and fresh parsley if desired, and serve immediately.

Notes

Ensure the chicken is brought to room temperature before cooking for a more even bake. Pounding the chicken helps tenderize the meat.
