A comforting and elegant dish featuring succulent chicken in a creamy, sun-dried tomato sauce, perfect for weeknights or special occasions.

Ingredients

  • 3 tbsp extra-virgin olive oil (divided)
  • 4 pieces boneless, skinless chicken breasts
  • 1 tbsp Kosher salt
  • 1 tbsp freshly ground black pepper
  • 2 cloves garlic (finely chopped)
  • 1 tbsp fresh thyme leaves
  • 1 tsp crushed red pepper flakes
  • 0.75 cup low-sodium chicken broth
  • 0.5 cup sun-dried tomatoes (finely chopped)
  • 0.5 cup heavy cream
  • 0.25 cup Parmesan cheese (finely grated)
  • 1 cup fresh basil (torn, for serving)

Instructions

  1. Preheat your oven to 375ยฐF and arrange a rack in the center.
  2. Heat 1 tablespoon of olive oil in a large ovenproof skillet over medium-high heat.
  3. Season the chicken breasts with salt and pepper, then cook until golden brown, about 5 minutes per side. Transfer to a plate.
  4. In the same skillet, reduce the heat to medium and add the remaining oil. Add garlic, thyme, and red pepper flakes, cooking until fragrant (about 1 minute).
  5. Pour in the chicken broth, sun-dried tomatoes, heavy cream, and Parmesan. Season with salt, bringing the mixture to a simmer.
  6. Return the chicken to the skillet along with any juices from the plate.
  7. Transfer the skillet to the oven and bake for 10 to 12 minutes, or until the chicken is cooked through (165ยฐF internal temperature).
  8. Once done, arrange the chicken on a platter, spoon the sauce over it, and top generously with fresh basil before serving.

Notes

Make sure to pat the chicken dry before seasoning for a nice sear. Fresh basil is crucial for flavor.
