A delightful and creamy chicken dish featuring sun-dried tomatoes that is perfect for date nights or family gatherings.

Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 3 Tbsp. extra-virgin olive oil, divided
  • Kosher salt
  • Black pepper
  • 2 cloves garlic, finely chopped
  • 1 Tbsp. fresh thyme leaves
  • 1 tsp. crushed red pepper flakes
  • 3/4 cup low-sodium chicken broth
  • 1/2 cup chopped sun-dried tomatoes
  • 1/2 cup heavy cream
  • 1/4 cup finely grated Parmesan
  • Torn fresh basil for garnish

Instructions

  1. Season both sides of the chicken breasts with plenty of salt and pepper.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Once hot, add the chicken breasts and cook for about 5-7 minutes on each side until golden brown and fully cooked. Transfer the cooked chicken to a plate.
  3. Add the remaining olive oil and sauté the garlic until it’s fragrant, about 30 seconds.
  4. Stir in the thyme, crushed red pepper flakes, and sun-dried tomatoes.
  5. Pour in the chicken broth, scraping up bits stuck to the pan, and allow to simmer for 2-3 minutes.
  6. Stir in the heavy cream and Parmesan until it combines.
  7. Return the chicken to the skillet, coating it in the sauce. Cook for an additional 3-5 minutes to heat everything through.
  8. Garnish with torn fresh basil and serve warm.

Notes

For a lighter dish, consider substituting heavy cream with half-and-half or a plant-based alternative. Pair with creamy mashed potatoes or fresh salad.
