A quick and easy one-pan teriyaki chicken stir fry packed with flavor and vegetables, ready in under 20 minutes.

Ingredients

  • 1 pound chicken breast, sliced
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots, etc.)
  • 1/4 cup teriyaki sauce
  • 2 tablespoons olive oil
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste
  • Cooked rice or noodles for serving

Instructions

  1. Heat 2 tablespoons olive oil in a large skillet over medium heat until shimmering.
  2. Add 1 teaspoon minced garlic and 1 teaspoon minced ginger, and sautรฉ for about 30 seconds until fragrant.
  3. Add the sliced chicken breast, season with salt and pepper, and cook for about 5โ€“7 minutes until browned and cooked through.
  4. Push the chicken to the side, add 2 cups mixed vegetables, and cook for about 5 minutes until tender but still crisp.
  5. Pour 1/4 cup teriyaki sauce over the chicken and vegetables, stir to combine, and cook for 2โ€“3 minutes until heated through and glossy.
  6. Spoon the stir fry over cooked rice or noodles and garnish as desired.

Notes

For a gluten-free option, use tamari-based teriyaki sauce. Adjust cooking time slightly when using chicken thighs.
