  • 2 teaspoons dried Italian seasoning
  • 1 cup sun-dried tomatoes, drained and chopped
  • 1 cup dry orzo pasta
  • 2ยฝ cups chicken broth
  • 1 cup half-and-half
  • 1 cup grated parmesan cheese
  • ยฝ cup fresh basil, chopped

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Cook the chicken pieces, seasoned with salt and pepper, for 6-8 minutes until fully cooked.
  3. Add the minced garlic, paprika, Italian seasoning, and sun-dried tomatoes, cooking for 2 minutes.
  4. Incorporate the dry orzo and chicken broth, bringing to a boil before lowering the heat and simmering for 10-12 minutes.
  5. Make it creamy by stirring in the half-and-half.
  6. Finish with grated parmesan cheese and fresh basil until melted.
  7. Serve immediately, adjusting seasoning as needed.

For a vegetarian option, substitute chicken with chickpeas and use vegetable broth instead of chicken broth.
