  • 1 tsp kosher salt (plus more to taste)
  • 0.5 tsp black pepper
  • 1 tsp Italian seasoning
  • 0.5 tsp smoked paprika
  • 2 tbsp all-purpose flour
  • 2 tbsp olive oil (or oil from the sun-dried tomato jar)
  • 2 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 0.5 cup chopped sun-dried tomatoes, packed in oil and drained
  • 1 cup low-sodium chicken broth
  • 1 cup heavy cream
  • 0.25 tsp red pepper flakes (optional, more to taste)
  • 0.75 cup freshly grated parmesan cheese (plus more for serving)
  • 18 oz cheese tortellini, fresh or frozen
  • 2 cups loosely packed baby spinach
  • 1 tbsp chopped fresh basil or parsley (optional, for garnish)
  • Lemon wedges, for serving

Instructions

  1. Season the chicken breast pieces with kosher salt, black pepper, Italian seasoning, smoked paprika, and flour until evenly coated.
  2. Heat olive oil in a large deep skillet over medium-high heat. Sear the chicken for about 6โ€“8 minutes, stirring occasionally until golden and cooked through. Transfer to a plate and set aside.
  3. Reduce the heat to medium, add butter to the same skillet, and stir in the minced garlic and sun-dried tomatoes. Cook for about 30 seconds until fragrant.
  4. Pour in the chicken broth, scraping up any flavorful browned bits from the pan. Add the heavy cream and red pepper flakes, bringing the mixture to a gentle simmer.
  5. Stir in the tortellini, ensuring they are well-coated in the creamy sauce. Cover and reduce the heat to medium-low, cooking until the tortellini are tender, about 5โ€“9 minutes depending on the brand you use.
  6. Fold in the baby spinach until wilted, then return the chicken and its juices to the skillet.
  7. Gradually sprinkle in the parmesan cheese, stirring until the sauce is smooth and slightly thickened. Taste and adjust the seasoning as needed.

Notes

If using frozen tortellini, increase the simmering time slightly. Avoid microwaving leftovers as it can overcook the tortellini.
