A delightful and creamy chicken tortellini dish perfect for romantic dinners or family meals.

  • 1 pound cheese tortellini (cooked al dente)
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 pound boneless skinless chicken thighs (cut into 1-inch cubes)
  • 4 cloves garlic (thinly sliced)
  • 1/3 cup dry white wine
  • 1 teaspoon Italian seasoning
  • 2 tablespoons tomato paste
  • 1/2 cup sun-dried tomatoes (roughly chopped)
  • 1 cup heavy cream
  • 1/3 cup Parmesan cheese (freshly grated)
  • 68 leaves fresh basil (shredded for garnish)
  • Salt and freshly ground black pepper (to taste)

Instructions

  1. Heat the olive oil and butter in a large skillet over medium-high heat. Once hot, add the cubed chicken thighs. Sear for about 7-10 minutes until fully cooked and golden brown.
  2. Reduce the heat to medium and add the sliced garlic to the skillet. Sautรฉ for about one minute until fragrant.
  3. Bring a pot of salted water to a boil. Cook the tortellini according to package instructions until al dente. Reserve a cup of pasta water, drain, and set aside.
  4. Pour the dry white wine into the skillet to deglaze, scraping up any browned bits. Let it simmer for a few minutes.
  5. Stir in the Italian seasoning, tomato paste, sun-dried tomatoes, and heavy cream. Allow the mixture to simmer until thickened, stirring occasionally.
  6. Toss the cooked tortellini into the sauce, mixing well to combine. Add the Parmesan cheese and shredded basil, stirring until the cheese melts and everything is nicely coated. Season with salt and freshly ground black pepper to taste.

Notes

For a beautiful presentation, serve in shallow pasta bowls garnished with extra basil and Parmesan. Pair with a salad or garlic bread.
