  • 4 pieces Boneless, skinless chicken breasts
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 4 cloves Minced garlic
  • 1 cup Low-sodium chicken broth
  • 1 cup Heavy cream
  • 1/2 cup Grated fresh parmesan cheese
  • 1/2 cup Sun-dried tomatoes (packed in oil)
  • 1 teaspoon Dried oregano
  • 1/4 teaspoon Crushed red pepper flakes
  • 1/4 cup Chiffonaded fresh basil
  • 1/4 cup Grated fresh parmesan cheese (for an extra cheesy finish)

Instructions

  1. Begin by seasoning the chicken breasts with salt and black pepper on both sides.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken breasts and sear for about 6-7 minutes on each side, ensuring they are cooked through and golden brown. Once done, remove the chicken and set it aside.
  3. Reduce the heat to medium, and add the minced garlic to the same skillet. Sautรฉ for 1-2 minutes until fragrant.
  4. Pour in the chicken broth, making sure to scrape the skillet to release any flavorful bits. Bring this to a gentle simmer.
  5. Stir in the heavy cream, parmesan, sun-dried tomatoes, oregano, and crushed red pepper flakes. Allow the sauce to simmer for 3-4 minutes until it thickens.
  6. Return the seared chicken to the skillet, spooning the sauce over it. Cook for an additional 2-3 minutes.
  7. Finish with fresh basil and an extra sprinkle of parmesan cheese before serving.

Notes

Pairs well with creamy mashed potatoes, al dente pasta, or fluffy rice. For a lighter option, serve with a fresh salad or roasted veggies.
