Marry Me Chicken Soup is the epitome of comfort in a bowl, combining robust flavors with simple ingredients for a quick and heartwarming meal.

Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 small onion (diced)
  • 3 garlic cloves (minced)
  • 1 teaspoon dried thyme
  • 1/2 teaspoon red pepper flakes (optional)
  • 3 cups shredded rotisserie chicken
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated parmesan
  • Salt and pepper to taste
  • Optional: a handful of baby spinach or kale

Instructions

  1. Sautรฉ Aromatics: Heat the olive oil in a large pot over medium heat. Add the diced onion and cook until softened, about 5 minutes. Stir in the minced garlic and thyme, and cook for another minute until fragrant.
  2. Incorporate Chicken: Add in the shredded rotisserie chicken, allowing it to mix with the aromatics for a couple of minutes to absorb those delicious flavors.
  3. Add Broth: Pour in the chicken broth, bringing the mixture to a gentle simmer. Let it cook for about 10 minutes to meld the flavors together.
  4. Creamy Finish: Lower the heat and stir in the heavy cream and grated parmesan. Season with salt, pepper, and optional red pepper flakes to your liking.
  5. Add Greens: If desired, fold in a handful of baby spinach or kale until just wilted. Serve hot, and consider pairing it with crusty bread or a fresh salad for a complete meal.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 to 5 days and can also be frozen for up to 3 months. Reheat gently, adding a splash of broth or water as needed.
