  • 4 pieces Chicken Breasts, boneless, skinless (or chicken thighs)
  • 8 ounces Pasta (fettuccine or penne; whole wheat or gluten-free options)
  • 1 cup Heavy Cream (or Greek yogurt for a lighter option)
  • 4 cloves Garlic, minced
  • ยฝ cup Parmesan Cheese, grated (or nutritional yeast for a dairy-free option)
  • 2 cups Fresh Spinach (or kale/arugula)
  • ยฝ teaspoon Red Pepper Flakes
  • Salt and Pepper to taste
  • 2 tablespoons Olive Oil

Instructions

  1. Bring water to a boil in a large pot, add a pinch of salt, and cook the pasta until al dente according to package instructions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Season chicken with salt and pepper, cooking for about 6-7 minutes on each side until golden and cooked through. Remove from skillet and set aside.
  3. Add minced garlic to the same skillet and sautรฉ until fragrant, about 30 seconds. Pour in the heavy cream and bring to a gentle simmer.
  4. Stir in Parmesan cheese until melted, adjusting the seasoning with salt, pepper, and red pepper flakes.
  5. Toss in fresh spinach and let it wilt in the sauce. Return cooked chicken to the skillet and mix to coat.
  6. Add the drained pasta and stir everything together thoroughly.
  7. Plate generously, adding a sprinkle of extra Parmesan and red pepper flakes if desired.
