This creamy Marry Me Chicken Pasta features seared chicken breasts enveloped in a savory sauce with sun-dried tomatoes, perfect for special occasions or weeknight dinners.

  • 2 chicken breasts
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 0.5 cup sun-dried tomatoes, chopped
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 0.75 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 0.25 teaspoon red pepper flakes
  • 12 ounces pasta (penne or rigatoni)
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Instructions

  1. Season the chicken breasts with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Sear the chicken until golden brown and cooked through, about 5-7 minutes per side. Remove from the pan and set aside.
  3. In the same skillet, sautรฉ minced garlic until fragrant, about 30 seconds.
  4. Add the chopped sun-dried tomatoes and cook for about 2 minutes until they soften.
  5. Pour in the chicken broth to deglaze the pan, scraping up any browned bits for flavor.
  6. Stir in the heavy cream, grated Parmesan, Italian seasoning, and red pepper flakes. Let the sauce simmer until slightly thickened, about 5 minutes.
  7. Cook the pasta in a pot of salted boiling water until al dente, reserve 0.5 cup of pasta water, then drain.
  8. Slice the cooked chicken and return it to the skillet with the creamy sauce.
  9. Add the cooked pasta and toss everything to coat. Use reserved pasta water to adjust the sauce consistency if needed.
  10. Taste and adjust seasoning with more salt and pepper. Serve hot, topped with additional Parmesan and a sprinkle of red pepper flakes if desired.

Notes

This dish can be served warm, optionally topped with fresh herbs and paired with a light salad or garlic bread.
