A creamy and flavorful pasta dish with seared chicken, sun-dried tomatoes, and a rich fettuccine sauce, perfect for impressing loved ones.

  • 2 boneless, skinless chicken breasts
  • 8 ounces fettuccine
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 small onion, finely chopped
  • Salt and black pepper to taste

Instructions

  1. Cook the fettuccine according to package instructions until al dente; drain and set aside.
  2. In a large skillet over medium-high heat, heat the olive oil and butter together. Season the chicken with salt and black pepper. Sear them until golden brown on both sides, about 5โ€“7 minutes per side. Remove the chicken and set aside.
  3. In the same skillet, sautรฉ the finely chopped onion and minced garlic until softened, about 2โ€“3 minutes.
  4. Deglaze the pan with a splash of white wine, scraping up any delicious bits stuck to the bottom. Add the chicken broth and heavy cream next, stirring to combine.
  5. Stir in the sun-dried tomatoes. If using, add red pepper flakes for extra heat. Simmer until the sauce slightly thickens, approximately 5โ€“7 minutes.
  6. Stir in the grated Parmesan cheese until melted and creamy.
  7. Slice the cooked chicken and return it to the skillet along with the cooked fettuccine. Toss well to coat everything in the sauce.
  8. If desired, add a handful of fresh spinach and a squeeze of lemon juice, allowing the spinach to wilt for added color and nutrition.
  9. Serve garnished with fresh basil leaves and extra Parmesan cheese.

Notes

Feel free to swap heavy cream with half-and-half for a lighter option, or use whole wheat pasta for a healthier twist.
