A comforting and indulgent dish featuring tender chicken breasts, creamy sauce, and hearty penne pasta, perfect for weeknight dinners or special occasions.

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon paprika
  • 3 cloves garlic (minced)
  • 1 cup heavy cream
  • ยฝ cup chicken broth
  • ยฝ cup grated Parmesan cheese
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • ยฝ cup sun-dried tomatoes (chopped)
  • 10 oz penne pasta
  • Fresh basil (chopped)

Instructions

  1. Bring a large pot of salted water to a boil and cook the penne pasta until al dente. Drain and set aside.
  2. Season the chicken breasts generously with salt, black pepper, and paprika.
  3. Heat olive oil in a skillet over medium heat and add the chicken. Cook for 6-7 minutes per side until they are fully cooked through. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add the minced garlic and sautรฉ for about 1 minute until fragrant.
  5. Pour in the heavy cream and chicken broth. Whisk in the Parmesan cheese, then stir in the thyme, oregano, and sun-dried tomatoes. Simmer until the sauce thickens slightly.
  6. Return the chicken to the skillet and let it soak in the flavors for about 5 minutes.
  7. Add the cooked penne pasta to the skillet, tossing everything together until the pasta is nicely coated in that creamy sauce.
  8. Finish with freshly chopped basil on top and serve hot.

Notes

For a healthier twist, swap the heavy cream for a lower-fat option or use grilled chicken instead of sautรฉed.
