A creamy and rich pasta dish featuring rotisserie chicken and sun-dried tomatoes, perfect for weeknight dinners.

  • 2 cups shredded rotisserie chicken
  • 2 tablespoons butter
  • 1/2 tablespoon all-purpose flour
  • 34 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 1/3 cup dry white grape juice or chicken broth
  • 1 cup heavy cream
  • 1/3 cup sun-dried tomatoes, drained and chopped
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes
  • 1/3 cup freshly grated Parmesan cheese
  • Fresh basil, chopped, for garnish
  • Salt and freshly ground black pepper to taste

Instructions

  1. Cook the pasta: Start by boiling a large pot of salted water. Cook the pasta according to package directions until al dente. Be sure to reserve about 1 cup of the pasta water before draining.
  2. Prepare the base: In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until it’s fragrant. Sprinkle in the flour, whisking it together to make a roux, and cook for another minute.
  3. Incorporate tomato paste: Stir in the tomato paste, allowing it to cook for 1-2 minutes. Gradually whisk in the white grape juice or chicken broth until the mixture is smooth.
  4. Add cream: Pour in the heavy cream and let it gently simmer for 3-5 minutes, stirring until it thickens. Mix in the sun-dried tomatoes, dried oregano, and red pepper flakes.
  5. Combine chicken: Add the shredded rotisserie chicken to the skillet, ensuring it gets heated through for about 2-3 minutes. Season it to taste with salt and freshly ground black pepper.
  6. Mix with pasta: Toss the cooked pasta into the skillet, mixing everything well. Use the reserved pasta water as needed to adjust the consistency.
  7. Finish with cheese: Stir in the freshly grated Parmesan cheese until it’s melted and creamy. Serve immediately, garnished with chopped basil for a burst of freshness.

Notes

For a vegetarian twist, swap rotisserie chicken for cooked shrimp or sautéed mushrooms.
