A creamy, dreamy chicken dish enriched with parmesan and sun-dried tomatoes that is perfect for a romantic dinner.

  • 4 boneless skinless chicken breasts
  • Salt, to taste
  • Black pepper, to taste
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • ½ cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup grated parmesan cheese
  • 1 teaspoon Italian seasoning
  • Fresh basil or parsley for garnish

Instructions

  1. Prepare the chicken: Pat dry the chicken breasts with paper towels. Season both sides with salt and black pepper.
  2. Sear the chicken: Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for about 4-5 minutes on each side until they’re lightly golden. Remove from skillet and set aside.
  3. Cook the aromatics: Lower the heat slightly. Add the minced garlic and chopped sun-dried tomatoes to the same skillet. Sauté for about 1 minute until fragrant.
  4. Build the sauce: Pour in the chicken broth and heavy cream, stirring gently to scrape up the delicious browned bits from the pan.
  5. Add cheese and seasoning: Stir in the grated Parmesan cheese and Italian seasoning. Let the sauce simmer for a few minutes until it thickens slightly.
  6. Finish the chicken: Return the seared chicken back to the skillet, ensuring it’s well-coated in the creamy sauce. Simmer for about 5 minutes until the chicken is thoroughly cooked.
  7. Garnish and serve: Sprinkle fresh basil or parsley on top and serve warm for an inviting meal.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. Freeze for up to 3 months.
