  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 cup sun-dried tomatoes, chopped
  • 1/2 cup grated Parmesan cheese
  • Fresh basil for garnish

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. Heat the olive oil in a large skillet over medium heat.
  3. Add the chicken breasts and cook until browned, about 5-7 minutes per side. Then remove them from the skillet and set aside.
  4. In the same skillet, add minced garlic. Sauté for 1 minute until fragrant.
  5. Pour in the heavy cream and chicken broth, then stir in the Italian seasoning and red pepper flakes. Bring to a simmer.
  6. Incorporate the chopped sun-dried tomatoes and grated Parmesan cheese, stirring until fully combined.
  7. Return the chicken to the skillet. Cover and let it simmer on low for 10-15 minutes, until the chicken is cooked through and the flavors meld.
  8. Garnish with fresh basil before serving.

Notes

For a lighter version, swap the heavy cream with half-and-half. This dish pairs perfectly with creamy polenta or pasta.
