A delightful combination of tender chicken breasts bathed in a creamy sauce with sun-dried tomatoes and spinach, perfect for a cozy evening or date night.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup spinach
  • 1 teaspoon Italian seasoning
  • Parmesan cheese for garnish

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. Heat the olive oil in a large skillet over medium heat.
  3. Add the chicken breasts to the skillet, cooking for 6-7 minutes on each side until golden brown and cooked through.
  4. Remove the chicken from the skillet and set aside on a plate.
  5. Add the minced garlic to the skillet and sauté for about 1 minute until fragrant.
  6. Pour in the chicken broth and bring it to a gentle simmer.
  7. Add the heavy cream, chopped sun-dried tomatoes, spinach, and Italian seasoning. Stir well to combine.
  8. Return the chicken to the skillet, letting it simmer for about 5 minutes, or until the sauce thickens to your liking.
  9. Serve hot, garnished generously with grated Parmesan cheese.

Notes

Consider alternatives like fresh tomatoes for sun-dried tomatoes or half-and-half instead of heavy cream. This dish pairs well with rice, mashed potatoes, or pasta.
