  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, oil-packed, drained
  • 1/4 cup chopped fresh basil
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Prepare the chicken: Pat the chicken breasts dry with paper towels.
  2. Season: In a small bowl, combine salt, pepper, garlic powder, and paprika. Rub this mixture on both sides of the chicken breasts.
  3. Sear: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat, then add the chicken. Sear for 5-7 minutes on each side until golden brown. Remove the chicken and set aside.
  4. Sauté garlic: In the same skillet, add the remaining 2 tablespoons of olive oil. When hot, add minced garlic and sauté for about 30 seconds until fragrant.
  5. Add ingredients: Stir in sun-dried tomatoes and chopped basil, cooking for another minute.
  6. Simmer: Pour in chicken broth and bring it to a simmer, scraping up any browned bits from the pan.
  7. Create the sauce: Lower the heat, stir in the heavy cream, Parmesan cheese, and optional red pepper flakes. Simmer for 5-7 minutes until the sauce thickens.
  8. Combine: Return the chicken to the skillet, cover it with the sauce, and let it simmer for another 2-3 minutes to absorb all those delicious flavors.
  9. Serve: Enjoy the dish over pasta, rice, or with some crusty bread, garnished with extra basil and Parmesan for a wonderful presentation.
