Instructions

  1. Prepare the chicken: Begin by patting the chicken thighs dry. Season both sides generously with salt, black pepper, and Italian seasoning.
  2. Sear the chicken: In a large skillet, heat the olive oil over medium heat. Once hot, sear the chicken for about 4-5 minutes on each side until golden brown. Remove the chicken from the skillet and set it aside.
  3. Sautรฉ garlic: In the same skillet, add the minced garlic. Sautรฉ for about 1 minute until it becomes fragrant.
  4. Make the sauce: Reduce the heat and stir in the heavy cream. Gradually add the parmesan cheese, stirring continuously until smooth and creamy.
  5. Add sun-dried tomatoes: Mix in the chopped sun-dried tomatoes, allowing the sauce to simmer gently for 2-3 minutes.
  6. Simmer the chicken: Nestle the seared chicken thighs back into the skillet, spoon sauce over them, cover, and let simmer on low heat for 10-12 minutes or until the chickenโ€™s internal temperature reaches 165ยฐF.
  7. Garnish and serve: Remove the skillet from heat. Garnish with fresh basil or red pepper flakes and serve hot with your favorite sides.
