  • 2 lbs boneless skinless chicken breasts
  • 1 ⅓ tablespoons olive oil
  • Salt and black pepper (to taste)
  • 1 cup chicken broth
  • 2/3 cup heavy cream (at room temperature)
  • 1/4 cup fresh grated parmesan cheese (at room temperature)
  • 2 teaspoons minced garlic
  • 2/3 cup sun-dried tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon crushed red pepper flakes

Instructions

  1. Preheat your oven to 375 degrees and place your skillet in the center.
  2. Season the chicken breasts generously with salt and black pepper.
  3. Heat olive oil in a skillet over medium-high heat. Once hot, sear each chicken breast for about 3-4 minutes on each side until they develop a golden crust. Then, remove the chicken and set it aside.
  4. In the same skillet, add the minced garlic and sauté for about one minute until fragrant.
  5. Pour in the chicken broth and let it cool slightly.
  6. Stir in the heavy cream, parmesan cheese, sun-dried tomatoes, oregano, and crushed red pepper flakes. Allow the sauce to come to a gentle simmer.
  7. Return the chicken to the skillet, making sure to coat it thoroughly with the sauce.
  8. Transfer the skillet to the preheated oven and bake for 12-15 minutes until the chicken reaches an internal temperature of 160 degrees.
  9. Once done, let the chicken rest for about 5 minutes before serving.

Ensure your cream is at room temperature to prevent curdling. For added flavor, consider marinating the chicken ahead of time.
