  • 4 thinly sliced chicken breasts
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 3 tablespoons all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/3 cup sun-dried tomatoes, chopped
  • 1 small onion, diced
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken stock
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon crushed red pepper flakes
  • 1/2 cup parmesan cheese
  • Basil, sliced, for serving

Instructions

  1. Mix together the flour, salt, and pepper in a shallow bowl. Dredge the chicken breasts in the seasoned flour, shaking off any excess.
  2. Heat the olive oil and butter in a large skillet over medium-high heat.
  3. Add the chicken to the skillet and cook for about 3 minutes on each side until golden brown. Remove the chicken and set it aside.
  4. In the same skillet, add the diced onion and sun-dried tomatoes. Sautรฉ for roughly 4 minutes until the onion softens.
  5. Add the minced garlic and cook for an additional minute.
  6. Pour in the chicken stock, scraping up any browned bits from the pan. Stir in the heavy cream, Italian seasoning, and crushed red pepper flakes. Bring to a simmer and let cook for 2-3 minutes.
  7. Remove from heat and stir in the parmesan cheese. Adjust seasoning with salt and pepper to taste.
  8. Return the chicken to the skillet, ensuring itโ€™s well coated in the creamy sauce. Serve garnished with sliced basil.

For the best flavor, use fresh herbs. You can substitute chicken breasts with thighs and add vegetables for more nutrients.
