Homemade Chicken Parmesan

A delightful combination of tender, breaded chicken smothered in rich tomato sauce and gooey melted cheese, perfect for weeknight dinners.

  • 2 large boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup breadcrumbs (preferably Italian-style)
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh basil (optional, for garnish)
  • Salt and pepper, to taste
  • Olive oil, for frying

Instructions

  1. Preheat your oven to 375ยฐF (190ยฐC).
  2. Tenderize the chicken: Using a meat mallet, flatten the chicken breasts to an even thickness of about 1 inch. Season both sides with salt and pepper.
  3. Set up your breading station: Place the flour in one dish, beaten eggs in another, and breadcrumbs in a third.
  4. Dredge the chicken: Coat each chicken breast first in flour, shaking off excess, then dip it in the egg, and finally, coat with breadcrumbs. Press gently to adhere.
  5. Fry the chicken: In a large skillet, heat a generous amount of olive oil over medium heat. Fry the breaded chicken for about 4-5 minutes on each side until they are golden brown.
  6. Prepare for baking: In a baking dish, spread a layer of marinara sauce, place the fried chicken on top, cover with more marinara, then sprinkle both the mozzarella and Parmesan cheese on top.
  7. Bake to finish: Bake in the oven for about 20 minutes, or until the cheese is melted and bubbly. If you prefer, you can broil for an additional 1-2 minutes for a crispy, golden finish.
  8. Garnish and serve: Once done, garnish with fresh basil and serve hot!

Notes

For an extra crispy texture, consider double-breading the chicken. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
