Delicious and nourishing oatmeal bars made with peanut butter and rolled oats, perfect for breakfast or a snack.

  • 2 cups rolled oats
  • 1 cup natural peanut butter
  • 1/2 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chunks or chips (optional)
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC) and line an 8ร—8-inch or 9ร—9-inch baking dish with parchment paper.
  2. In a large mixing bowl, combine peanut butter, honey (or maple syrup), and vanilla extract. Mix until smooth and well-combined.
  3. In a separate bowl, whisk together rolled oats, baking soda, and salt. If youโ€™re using chocolate chunks or chopped nuts, add them in here as well.
  4. Gradually stir the dry mixture into the wet mixture, blending until you achieve a thick batter.
  5. Transfer the mixture to your prepared baking dish. Press it down firmly to create an even layer.
  6. Bake for 20-25 minutes or until the edges turn golden brown.
  7. Once done, remove from the oven and let cool for 10 minutes. Lift the bars out using the parchment paper and let cool completely before slicing them into squares.

Notes

Store in an airtight container at room temperature for up to five days. Refrigerate for longer shelf life or freeze for up to three months.
