Deliciously fluffy pancakes made with Greek yogurt for a nutritious twist on a breakfast classic.

Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • ยผ teaspoon salt
  • 1 cup Greek yogurt (2% plain)
  • ยผ cup milk (or water)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons melted butter (or oil)

Instructions

  1. Whisk together the flour, sugar, baking powder, and salt in a small bowl.
  2. Combine the Greek yogurt, milk, eggs, vanilla extract, and melted butter in a medium bowl and whisk until smooth.
  3. Gradually add the dry ingredients to the wet mixture and stir until just combined; a few lumps are fine, so avoid overmixing!
  4. Heat a large nonstick pan over medium heat for about 60-90 seconds and lightly grease with oil or butter.
  5. Pour ยผ cup of batter onto the hot pan and cook for about 2 minutes until the edges start to dry and bubbles form on the surface.
  6. Flip the pancake and cook for an additional 1-2 minutes until golden brown.
  7. Repeat with the remaining batter, greasing the pan between each pancake.
  8. Serve warm with butter, maple syrup, or your favorite toppings.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days or freeze for up to 2 months.
