Scale
  • 12 eggs
  • 2 tablespoons milk
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 12 slices cooked bacon, sausage patties, ham, or Canadian bacon
  • 12 English muffins
  • 12 slices cheddar cheese (or your favorite cheese)

Instructions

  1. Preheat your oven to 325ยฐF (163ยฐC).
  2. Generously grease a 9ร—13-inch pan to prevent sticking.
  3. Whisk together the eggs, milk, salt, and pepper in a large bowl until well combined.
  4. Pour the egg mixture into the prepared pan, spreading it evenly.
  5. Bake for 18-22 minutes, or until the center is just set.
  6. Remove the pan from the oven and allow it to cool for a few minutes.
  7. Cut the baked eggs into 12 equal squares.
  8. Assemble each English muffin: place a square of egg, a slice of cheese, and your choice of meat between the halves.
  9. If serving immediately, heat the sandwiches in a 350ยฐF (175ยฐC) oven for about 5 minutes or until the cheese melts.
  10. To freeze, wrap each sandwich tightly in foil or plastic wrap.
  11. For reheating, unwrap and bake in the oven at 350ยฐF for about 15-20 minutes or until hot, or microwave for 1-2 minutes.

Notes

Store sandwiches in an airtight container or wrapped tightly to keep them fresh. They can last in the freezer for up to 2 months.
