  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons unsalted butter
  • 3 garlic cloves, minced
  • ยฝ cup sun-dried tomatoes, chopped (packed in oil preferred)
  • 1 cup heavy cream (full-fat)
  • ยฝ cup chicken broth (low-sodium preferred)
  • ยฝ cup freshly grated Parmesan cheese
  • ยผ cup fresh basil, chopped
  • Pinch of red pepper flakes (optional)
  • Salt and pepper to taste
  • 2 tablespoons flour (all-purpose or gluten-free blend)

Instructions

  1. Start by drying the chicken breasts and seasoning them generously with salt and pepper.
  2. In a large skillet, heat olive oil and unsalted butter over medium-high heat until shimmering.
  3. Add the seasoned chicken and cook for 4โ€“5 minutes on each side until golden brown and cooked through. Once done, move the chicken to a plate and tent it with foil to keep warm.
  4. Reduce the heat to medium and add minced garlic to the same skillet. Sautรฉ for about 30 seconds until fragrant.
  5. Stir in the chopped sun-dried tomatoes and cook for an additional 2 minutes, stirring frequently.
  6. Sprinkle flour over the mixture, stirring to combine well.
  7. Gradually pour in the chicken broth while stirring to avoid lumps.
  8. Add the heavy cream, stirring continuously. Allow the sauce to simmer for 3โ€“4 minutes until it thickens.
  9. Stir in the grated Parmesan cheese until the sauce is smooth.
  10. Mix in the chopped basil and red pepper flakes (if using). Taste and adjust salt and pepper as necessary.
  11. Return the chicken to the pan, spooning the sauce over it, and warm together for 1โ€“2 minutes.
  12. Serve hot over your choice of sides.
