- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 3 cloves fresh garlic, minced
- 1 large sweet onion, chopped
- 1 cup low-sodium chicken broth
- 2 tsp cumin
- 2 tsp paprika
- 1 cup BBQ sauce or salsa
- Salt and pepper, to taste
Instructions
- Chop the sweet onion and mince the garlic cloves.
- Season both sides of the chicken breasts with salt and pepper.
- Layer the chopped onions and minced garlic at the bottom of the crockpot.
- Place the seasoned chicken breasts on top of the onion and garlic.
- Pour your choice of BBQ sauce or salsa evenly over the chicken.
- Add enough chicken broth to cover the chicken.
- Cover the crockpot with its lid, then set it to cook on low for 6 to 8 hours or on high for 3 to 4 hours.
- When ready, shred the chicken in the crockpot with two forks and mix with the cooking juices.
