A quick and delicious breakfast burrito bowl with creamy scrambled eggs, gooey cheese, and fresh salsa, perfect for busy mornings.

  • 23 large eggs
  • 1 tablespoon butter
  • Salt and pepper (to taste)
  • 1/4 cup shredded cheddar cheese
  • 3 tablespoons fresh salsa
  • 1/2 avocado (cut into chunks, optional)

Instructions

  1. Preheat a cast iron skillet or a heavy-bottomed pan over low-medium heat.
  2. Crack the eggs into a medium-sized bowl. Whisk them well and season with salt and pepper to taste.
  3. Add the butter to the preheated skillet and swirl it to coat.
  4. Pour the whisked eggs into the skillet, letting them spread evenly. Cook for 20-30 seconds undisturbed.
  5. Gently scrape the edges with a spatula while moving the cooked eggs toward the center.
  6. Continue to slide the spatula through the eggs, creating curds, until cooked through (about 1-2 minutes total).
  7. Transfer the scrambled eggs to a bowl. Top with cheddar cheese, salsa, and avocado.
  8. Serve hot and enjoy!

Notes

For a vegan version, substitute eggs with a tofu scramble and use nutritional yeast for a cheesy flavor. Store leftovers in an airtight container in the fridge for 2-3 days.
