Blueberry Greek Yogurt Bites

Delightful no-bake snack made with creamy Greek yogurt and fresh blueberries.

Ingredients

  • 1ยฝ cups plain Greek yogurt
  • 1 tablespoon honey or maple syrup
  • ยฝ teaspoon vanilla extract
  • ยพ cup fresh or frozen blueberries
  • 1 teaspoon lemon juice
  • 1 teaspoon honey (optional)
  • 1 teaspoon chia seeds (optional)

Instructions

  1. Prepare the Blueberry Compote: In a small saucepan over medium heat, combine the blueberries, lemon juice, and optional honey. Cook for 5โ€“6 minutes, stirring frequently, until the berries soften and release their juices. Lightly mash until jam-like. Allow the compote to cool.
  2. Make the Yogurt Base: In a medium bowl, whisk together the Greek yogurt, vanilla extract, and honey until smooth. Adjust sweetness as needed.
  3. Assemble the Bites: Spoon 1 tablespoon of yogurt into each cavity of a mini muffin tray. Add ยฝ teaspoon of blueberry compote on top. Swirl gently with a toothpick.
  4. Freeze: Place the tray flat in the freezer for at least 120 minutes until firm.
  5. Serve & Store: Carefully remove the bites from the tray and place them in an airtight container in the freezer. Thaw for 2โ€“4 minutes before serving.

Notes

For added crunch, sprinkle some nuts or granola over the compote before freezing. These bites can be made using other berries too!
