- 10 eggs
- 1/2 cup milk or cream
- 1 cup shredded cheddar cheese
- 1/2 cup chopped vegetables of your choice (e.g., bell peppers, tomatoes, onions)
- 1/2 cup cooked crumbled bacon or sausage (optional)
- 1/2 cup chopped turkey (optional)
- Salt and pepper to taste
- Non-stick cooking spray
Instructions
- Preheat your oven to 350°F (175°C).
- Generously spray a muffin tin with non-stick cooking spray to prevent sticking.
- Chop your vegetables and pre-cook the bacon or sausage if you’re using it.
- In a large bowl, whisk together the eggs, milk or cream, salt, and pepper until the mixture is frothy.
- Place your chopped veggies, cheese, and any optional meat into each muffin tin cavity.
- Carefully pour the egg mixture over the fillings, filling each cup about 3/4 of the way full.
- Gently stir each cavity to mix the ingredients with the egg mixture.
- Bake in the preheated oven for 12-18 minutes, or until the egg bites are set and lightly golden on top.
- Allow the bites to cool for a few minutes, then gently remove them from the muffin tin.
- Serve warm and enjoy!
Notes
Leftovers can be stored in the refrigerator for up to 4 days. Reheat in the microwave for about 30 seconds or enjoy cold.
