Moist and flavorful Banana Nut Muffins packed with nutty goodness, perfect for breakfast or a snack.

  • 1 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 1 1/2 teaspoons baking soda
  • 1/4 teaspoon salt
  • 1/8 teaspoon nutmeg
  • 1/8 teaspoon cinnamon
  • 1 stick salted butter (1/2 cup, melted)
  • 3 large ripe bananas (mashed)
  • 1/2 cup sugar
  • 1/4 cup dark brown sugar (packed)
  • 1/4 cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3/4 cup – 1 cup walnuts (toasted if desired)

Instructions

  1. Preheat your oven to 350ยฐF.
  2. In a large mixing bowl, whisk together the all-purpose flour, whole wheat flour, baking soda, salt, nutmeg, and cinnamon. Set aside.
  3. Melt the butter and let it cool slightly.
  4. In a separate bowl, mash the bananas until smooth. Stir in the melted butter, both sugars, milk, egg, and vanilla. Mix until well combined.
  5. Pour the wet ingredients into the dry mixture. Gently stir until just combined, being careful not to over-mix.
  6. Fold in half of the walnuts, then evenly distribute the batter into 12 greased or lined muffin cups.
  7. Sprinkle the remaining walnuts on top of the muffins.
  8. Bake for 22 to 26 minutes, or until golden brown and a toothpick inserted comes out clean.
  9. Let the muffins rest in the pan on a wire rack for 5 minutes, then remove and let cool completely on the rack.

Notes

Use very ripe bananas for sweeter and moister muffins. Toasting the walnuts can enhance their flavor.
